Which mode should I choose?

Flatten forms converts filled fields into page content and keeps text selectable, but removes other annotations. Rasterize pages preserves their visible appearance in images and removes selectable/searchable text.

Will form fields be editable after?

No. Keep the original if you need to edit the fields later. Flattening does not protect the whole PDF from future editing.
